It runs like a scalded dog but when you let off the throttle, she pops a lot. main 165, Idle 22.5 and needle is98 with one inch bolts in exhaust
When it comes to Mikuni's you are best off having it dyno tuned, there are just simply too many different circuits to adjust, when I did mine, I made I think 3 pilot jet changes, 6or 7 main jet changes, 2 needle changes and 7 or 8 needle height changes before I found the perfect set up.
Decel popping can be caused by both too lean and too rich conditions. In lean conditions, the air/fuel mixutre is so lean, that it is not being ignited in the chamber and passes through the exhaust and is ignited there by the excessive heat generated by the lean condition. In a rich condition, the high vacuum through the small, closed off carb venturi is actually drawing excessive fuel from the pilot jet circuit, this overly rich mixture is not being completely ignited and the remaining unburned fuel ignites in the pipe. I have seen engines tuned on the dyno that simply needed leaned out to eliminate decel popping and I have seen engines that needed to be richened up to the point where it literally "drowned out" the popping.
I would actually start by ensuring you have intake or exhaust leaks. Then try richening your idle mixture 1/2 - 1 turn (in), if this helps and the idle mix screw is out of Mikuni's specs of 1 1/2- 2 1/2, then change the pilot to a 25 and readjust your idle mixture, if it is still within the spec range, keep running it for a while and see what happens. The main has no affect on decel popping. This can also be affected by ignition timing somewhat. Alot of the time, with certain pipes, you can only minimize the popping, but you can't stop it.
I would also look into adding a specialized baffle into your pipes. Big City Thunder makes special baffles for any pipe, they don't change the sound, but the design of the baffle gives the optimum diamter and restriction/backpressure needed for the massive drop in mid-range torque associated with straight pipes, bolts in the pipes, simply don't work as well as you think.

Are your heads stock, ported, aftermarket?
What ignition system are you running?
Does the ignition have a VOES vacuum advance switch hooked up to it (these are NEEDED for street engines)? If running a voes, is it adjusted to 6.5" of vacuum or a perfromance VOES being used?
What timing setting are you running?
VW Mk3 8v; Techtonics dynomax exhaust, Autotec 270 cam, Black Forest stg:2 PEM, ARP Studs
